Story

Our Unshu mandarin liqueur grew out of work with fruit from Wakayama — Japan’s best-known mikan country. What people call “mikan” is usually Unshu mandarin: outdoor fruit from autumn into early winter, then stored fruit through spring — the citrus closest to the everyday Japanese table.

Today we use Japanese Unshu mandarin. Fruit also arrives from other domestic regions, so we do not lock the label to a single origin name. We pack the bottle with juice and the tiny pulp vesicles inside the thin membrane — not orange concentrate — so the mouthfeel of eating mikan stays in the pour.

Craft

Pulp vesicles and juice lead: ripe mandarin sweetness, gentle acidity, and a thick fruit body. On the rocks or with soda; with green tea or sweetened Earl Grey for an unexpected long drink; or with sparkling wine as a Bellini-style build. Yogurt for a lassi-style mix also works at the bar.

Serve

On the rocks, with soda, with green tea, with black tea (e.g. Earl Grey), or with sparkling wine. Chill the bottle well.

Cocktails

Mikan soda

Pour over ice; lengthen about 1:1 with chilled soda water.

Mikan Bellini

About 1:1 with chilled dry sparkling wine.

Fuzzy Navel

70 ml peach liqueur and 70 ml Unshu mandarin liqueur over ice; stir lightly.

Tequila Sunrise

Shake 70 ml Unshu mandarin liqueur with 30 ml silver tequila; pour over ice; float 1 tsp grenadine.
