Story

In the early 2000s we set out to make fruit liqueurs near our brewery in Yoshino, Nara. Trial after trial led us to a peach that could not go to the fresh market — fruit set aside from the usual retail grade — yet the grower promised the taste. That encounter became the starting point of our peach liqueur, and of the fruit-liqueur work we still do today.

Today every bottle is made with Japanese peaches. Supply shifts with the season across domestic growers; what does not change is the fruit itself: soft, fragrant white peach — long a symbol of celebration in Japan — processed for drinking, not just for looking pretty on a shelf.

Working with Japanese peach growers

Craft

In much of Europe and North America, “peach” means yellow peach. This bottle is different: we use white peach only, aiming for the nectar-like mouthfeel Japanese drinkers already know — and that bartenders can build into cocktails without fighting artificial candy sweetness.

We peel, stone, and mash the fruit, then marry it with alcohol so pulp and perfume stay in the pour. Straight, on the rocks, with soda, or with hot water — and especially as a Bellini — it is meant to make guests order a second glass, and buyers reorder the case.

Serve

On the rocks, with soda, with hot water, or as a White Peach Bellini. Chill the bottle well.

70 ml peach liqueur, 1 tsp lemon juice, 1 tsp sugar syrup, 1 tsp grenadine; shake gently, pour into a flute, top with champagne or dry sparkling wine.
